If you are not using a stitch regulator uneven stitching can occur.  It is a function of speed of the needle and how fast/slow you move the machine.  Do not be afraid to EXPERIMENT!  Try setting the needle/machine speed to a higher number and do some stitching.  Move the longarm slow, then medium, then faster speeds.  Watch what happens to the stitch lengths.  Then slow down your machine and do the same speed progression.  After practicing for awhile, you'll note what works best and be on your way to a beautiful quilt.
